STORY & ILLUSTRATIONS No.07:
Gunkan
A place where you can get a taste of refined Gunkan for a suitable price: the “Sushi Spot: ‘Kaisen'”. Let’s take a deeper look at the charm of this long-established store, where Gunkan connoisseurs from all over the country flock day and night, through some review blogs.
TL note: “Sushi Spot: ‘Kaisen'” is the OCG name for “Gunkan Sushipyard Seaside Supper Spot.” “Kaisen” is also a pun of both “naval battle” and “seafood.”
Gunkan Sushipyard Seaside Supper Spot
A long-established store where you can taste the ultimate integration of delicacy and refinement
At this store, located at the naval port and boasting over 100 years of history, we had the pleasure of experiencing the finest dish authored by authentic craftsmen. Furthermore, red vinegar will begin to be imported from EDO-FRONT starting this year. By adding this new ingredient, the high-quality “Shari-Red” will be offered from the newly-built, dedicated dock.
TL note: “Integration” here (一貫) can mean both “integration” and “one piece of sushi.”

Gunkan Suship Shari
“Went to this naval port dedicated to gunkan that peaked my interest from a long time ago. They only build 200 Shari a year, and with their unique old rice with low stickiness you can get a solemn experience…”
Gunkan Suship Uni
“Returned to the store after the arrival of the red vinegar made in EDO-FRONT. The quality of the rich yet mellow “Shari Red” provides a feeling of orthodoxy. The cherry on top is the sea urchin adding even more luxury, giving this dish the first-rate finishing touches…”
Gunkan Suship Shirauo
“I was blown away by them topping the gunkan with the noodlefish caught in the nearby EDO-WAN! Not only was it super fresh, but the bang for your buck was also amazing!! The most popular dishes are no longer available past noon…”
Gunkan Suship Ikura
“The staple dish I had to try the moment I came into the store. The best part was watching the crane carefully stacking the grains one by one. I got cold feet when I saw the “market price” display, but the next time, I’m definitely taking the challenge of the “Gunkan Suship Ikura-class”…

End of chapter
TL note: “Market price” here is a term used in sushi shops and other businesses where the price of perishable goods is variable and can only be determined at the time the item is ordered, up to the time the bill is settled.
