The Z is apparently Alles, which together with Nouvelle means “The New Way Forward”.

We waited so long, survived so much… they laughed… but they won’t be laughing once they’re tributed to the BURGER DIMENSION
Sorry to leave a second comment: I just wanted to note that I think it’s kind of fun that they’re also seemingly playing on the theme of restaurant star ratings by having the cooks wear their star badges like military officers, haha. So they go from ranks 1-5 for the general positions and have a rank 6 generalissimo, which of course also fits the fact that levels are stars too, right? It’s a cute choice that lines up with Hungry Burger’s level and everything.
The monsters uniform have the “michelin stars” a real chef receives as rewards irl.

The “z” in Nouvellez is the conjugation of the verb, as in to mean “all of us” or “let’s”. Together, this would be “The new way forward (together)”, I believe. Not French, so I could be misinterpreting.
Also interested to see the translation of fish recipe in French cards, as those cards translated to english would be “fish recipe – fish recipe”. In French it would be recette de poisson – recette de poisson.
